Pumpkin Pie Soup - My Way

- 1 tbsp. olive oil shopping list
- 1 tbsp. butter or margarine shopping list
- 3 tbsp. dice onion shopping list
- pinch sugar shopping list
- 1/4 tsp. ground black pepper shopping list
- 18 oz can pumpkin pie filling (19 will work as well) shopping list
- 2 cups low salt chicken broth shopping list
- 1 cup milk (what ever you use will work) shopping list
How to make it
- Heat oil and butter on medium high heat.
- Add onion, sugar and black pepper
- Cook until onion is translucent.
- Add pumpkin and broth. Mix well. Turn heat down to low and simmer for about 30 minutes.
- Taste if it is not the pumpkin pie flavour you wish add some ground cinnamon, cloves, nutmeg and all spice but do it a pinch at a time. Mix wait a couple of minutes and taste again.
- Add milk and turn the temp to almost off on the stove. You just want a small amount of heat. If the soup boils the milk will separate yes it is still great flavour but does not look that appealing.
