How to make it

  • Stir the crushed garlic into the mayonnaise, add lemon juice to taste and mix in well to combine everything together
  • Set aside
  • Pour sufficient oil into a wok or deep-fat fryer large enough to accommodate the calamari;
  • Mix the flour, cayenne, paprika and salt in a large bag, add the squid and shake around to coat evenly.
  • Over a medium heat, heat the oil to around 180C/350F;
  • To help check the oil is hot enough, drop a wee cube of bread into pan; It should become golden and crispy in 1 minute
  • Dip the floured squid into the beaten egg and then carefully lower into the hot oil.
  • Fry for some 2 to 3 minutes or so until Crispy and Golden;
  • Remove from the oil, drain on kitchen towel and serve with the mayonnaise, lemon wedges, a salad and/or a large plate of fries.
