My Favorite Sweet Potato Pie

- 1 3/4 c. Mashed Sweet Potatoes (I use fresh, not canned) shopping list
- 1 1/2 c. Evaporated Milk shopping list
- 1 c. Sugar shopping list
- 1 Tbsp. butter, melted shopping list
- 2 Eggs shopping list
- 1 tsp. Salt shopping list
- 1 tsp. cinnamon shopping list
- 1/2 tsp. Nutmeg shopping list
- 1/2 tsp. Ginger shopping list
- 1/2 tsp. Grated Lemon Peel shopping list
- 1 - Unbaked 9" Pie Shell shopping list
- Fresh Whipped Cream (or Cool Whip) shopping list
How to make it
- 1) Preheat oven to 400 degrees.
- 2) In a mixing bowl, add sweet potatoes, evaporated milk, and sugar. Mix well. Add eggs, one at a time, mixing after each addition. Stir in salt, cinnamon, nutmeg, ginger, and grated lemon peel. Pour into prepared pie shell.
- 3) Bake approximately 40 - 50 minutes or until a knife inserted comes out clean.
- 4) When serving, top with whipped cream.
