Spanish Chicken And Rice Hot Salad

A quick delicious and inexpensive meal!!!
Ingredients
- 1 box Near East Spanish Rice( I only use 1/2 of the season package ) shopping list
- 1 1/4 cup mayonnaise shopping list
- 1 cup chopped celery shopping list
- 2/3 cup chopped onion shopping list
- 2 cups chopped cooked chicken( thighs or legs or breast ) shopping list
- Tsp garlic powder shopping list
- Tsp Zatarains shopping list
- Sliced black olives if desired shopping list
- Serve in bed of lettuce or spinach if desired shopping list
How to make it
- Cook rice according to an a large directions
- In large bowl mix all ingredients together , adding more mayo if desired
- Serve on bed of fresh spinach
- I like to drizzle spinach with herb olive oil and a little Parmesan cheese
- If desired you can slice a couple of Roma tomatoes to dress the salad
