Alfredo Sauce, Pam Gardener’s Special

- • 3 tablespoons sweet butter shopping list
- • 2 tablespoons olive oil. shopping list
- • 2 or 3 strips of bacon, diced. Optional. shopping list
- • 2 garlic cloves, minced shopping list
- • 1 cup heavy cream shopping list
- • 1 cup milk. shopping list
- • Salt & FG pepper to taste shopping list
- • 1⁄2 cup grated Parmesan cheese shopping list
- • ¾ cup mozzarella cheese. Can sub another kind, if you like but mozzarella works really well. shopping list
- • 1 ea. 12 oz. (340g) pkt. Pasta (if using). I like angle hair for this but whatever you like. shopping list
How to make it
- 1. Melt butter in medium saucepan with olive oil over medium/low heat.
- 2. Add the bacon (if using) & cook until done, but not crisp. See Photo
- 3. Add the garlic, cream, pepper and bring mixture to a simmer, stirring often.
- 4. Add the Parmesan cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.
- 5. When sauce has thickened add the Mozzarella cheese and stir until smooth. STIR FREQUENTLY.
- 6. Here you decide if sauce is too thick. If it is, likely, add milk, beer, etc. to get it the way you want it. If you add stuff, stir and simmer for 5 minutes. See Photo
- 7. While the sauce cooks, boil pasta according to pkg. directions (if using).
- 8. Drain & rinse, then place pasta on serving plates and spoon sauce over it.
