Fiesta Chicken And Vegetable Packets

- 4 6 ounce portions boneless skinless chicken breast portions shopping list
- Marinade: shopping list
- 2 tablespoon Mrs. Dash Fiesta Lime seasoning shopping list
- 2 tablespoons oil shopping list
- 2 tablespoons apple cider vinegar shopping list
- 2 teaspoons lime juice shopping list
- 1 to 2 teaspoons chili powder shopping list
- 1/4 teaspoon each, salt and pepper shopping list
- 2 cans whole kernel corn drained or 2 cups frozen corn thawed shopping list
- 1 can black beans rinsed and drained shopping list
- 1 can diced tomatoes drained shopping list
- To serve top with shredded Mexican blend cheeses or your favorite shredded cheese shopping list
How to make it
- 1. Mix marinade as package directs, pour half ¼ cup of the mixed marinade over the chicken breast portions in a plastic resealable bag. Mushing the bag to get the marinade on all of the chicken. Place chicken in the refrigerator for 2 to 4 hours. Put reserved ¼ cup marinade in the refrigerator until later.
- 2. When ready to cook. Mix all of the vegetables and beans in a large bowl, pour reserved marinade over vegetables in bowl and mix well.
- 3. Place each chicken piece in the middle of a piece of foil; top with about 1 ½ cups of the veggie mixture. Double fold the foil and grill on medium heat for 25 to 30 minutes or until the chicken is done all the way through.

- You can make this Casserole style, spray the bottom and sides of a baking dish with cooking spray or olive oil. place marinated chicken on bottom of dish and cover with the corn mixture. bake covered about 30 minutes. Uncover and bake additional 15 to 20 minutes.
