How to make it

  • 1. Mix marinade as package directs, pour half ¼ cup of the mixed marinade over the chicken breast portions in a plastic resealable bag. Mushing the bag to get the marinade on all of the chicken. Place chicken in the refrigerator for 2 to 4 hours. Put reserved ¼ cup marinade in the refrigerator until later.
  • 2. When ready to cook. Mix all of the vegetables and beans in a large bowl, pour reserved marinade over vegetables in bowl and mix well.
  • 3. Place each chicken piece in the middle of a piece of foil; top with about 1 ½ cups of the veggie mixture. Double fold the foil and grill on medium heat for 25 to 30 minutes or until the chicken is done all the way through.
  • Notes: I served mine with homemade Cilantro Lime Rice. Cilantro Lime Rice Chipotle Copy Cat
  • You can make this Casserole style, spray the bottom and sides of a baking dish with cooking spray or olive oil. place marinated chicken on bottom of dish and cover with the corn mixture. bake covered about 30 minutes. Uncover and bake additional 15 to 20 minutes.

    I had to remove this ingredient "packet McCormick Grill Mates Mexican Fiesta Marinade"
    Since McCormick discontinued this in January of 2015 which is why I can't find it anymore. DANG IT! so hopefully the ingredients I have replace it with will taste comparable.
