Just Salsa

- • 1 lb. vine ripened tomatoes. Get the best you can. Course chopped. shopping list
- • 1 cup of ripe, bell peppers, seeded and chopped. Can sub Anaheim. shopping list
- • 1 cup of mild onion, chopped. shopping list
- • 1 clove of fresh garlic, chopped fine. shopping list
- • 1 Tbs. fresh lemon juice. shopping list
- • 1 Tbs. cilantro, chopped fine, if fresh. shopping list
- • 1 tsp. cumin. shopping list
- • 2 good sized spring onions, the green part, course chopped. shopping list
- • 1 tsp. Oregano. shopping list
How to make it
- Prep the stuff: Slice, dice, chop, etc.
- 1. Put all the ingredients in a mixing bowl and mix, gently but thoroughly.
- 2. Cover and let sit in the fridge for 30 minutes.
- 3. Bring out and mix again.
- 4. Let rest in the fridge for another 30 minutes.
- 5. Mix again and serve. See Photo
- I have no idea how long this will last in the fridge. I’ve never had a batch last more than three days. See Photo
