Walking In The Fresh Snow Cookies

- 4-1/2 C. all-purpose flour shopping list
- 1 tsp. baking soda shopping list
- 1 tsp. cream of tartar shopping list
- 1 tsp. salt (use ONLY if using unsalted butter) shopping list
- 1 C. (2 sticks) butter or margarine, softened shopping list
- 1 C. oil shopping list
- 1 C. granulated sugar shopping list
- 1 C. powdered sugar shopping list
- 1 tsp. vanilla (see note) shopping list
- 2 eggs shopping list
- Granulated sugar shopping list
How to make it
- In a large bowl, whisk together flour, baking soda, cream of tartar, and salt; set aside. In a very large bowl, cream together butter or margarine, oil, and sugars. One at a time, add eggs, then vanilla and mix well. Gradually stir in flour mixture until just combined and thoroughly incorporated. Cover and chill dough about 30 mins. to make for easier handling. Heat oven to 350 degrees. Roll dough into 1-inch balls, then in granulated sugar. Place 2 inches apart on a parchment paper lined baking sheet. Bake 10-12 mins. or until bottoms are very lightly browned and cookies are "set". Remove cookies to a wire rack and cool completely.
- Note: I use Penzeys double strength vanilla in all of my baking. It makes the flavor of everything richer. We don't normally like crunchy cookies of any kind, but these cookies manage to be slightly crunchy and melt-in-your-mouth at the same time - yum!
