How to make it

  • Preheat oven to 300 degrees F (150 degrees C).
  • Lightly grease a baking sheet or line with parchment paper
  • Stir together the egg, peanut butter and banana, in a medium bowl; blend thoroughly. Stir in the flour , oats and oat bran; mix well. Turn dough out onto a floured board and roll to 1/4 inch thick. Cut into desired shapes with a cookie cutter, place on prepared baking sheet, and brush tops with egg white.
  • Bake for one hour.
  • Leave the cookie sheets in the oven but turn the oven off.
  • Leave there until oven is completely cold.
  • Store in fridge.
  • Update. I thought that I had turned the oven off but I didn't. They were in for a total of 2 hours and are very hard.
