How to make it

  • Prepare the stuffing according to directions
  • Warm the 1 tablespoon olive oil in a medium size pan over medium heat.
  • Add the garlic and cook until fragrant, about 1 minute.
  • Add the sun-dried tomatoes, spinach, pecans, salt, pepper, and thyme.
  • Cook until combined, about 2 more minutes.
  • Transfer the mixture to a medium bowl.
  • Add the ricotta and the cream cheese.
  • Stir to combine and set aside.
  • Flatten the pork slightly with a mallet.
  • Spread the cheese mixture over the pork.
  • Then add the stuffing.
  • Roll and secure by tying the pork, or with tooth pics.
  • Rub all sides with olive oil and season with salt, pepper, and spice mix.
  • In a hot pan add 1 tablespoon of olive oil.
  • Sear roast on all sides, including the ends.
  • Roast in oven at 350 degrees until internal temperature is 180.
