Denny's Stuffed Pork Loin

- 1 tablespoon olive oil, plus 1 tablespoon shopping list
- 2 cloves garlic, minced shopping list
- 6 sun-dried tomatoes, diced shopping list
- 1 (10-ounce) bag of frozen spinach, thawed and excess water squeezed out shopping list
- 1/2 teaspoon salt, plus more for seasoning shopping list
- 1/2 teaspoon freshly ground black pepper, plus more for seasoning shopping list
- 1/4 teaspoon dried thyme shopping list
- 1/4 cup ricotta shopping list
- 1/3 cup cream cheese shopping list
- 1/3 cup chopped pecans shopping list
- 1 box herb stuffing mix shopping list
- 1 pork loin, 3 to 4 pounds, butterflied shopping list
- Spice mix: 1 tablespoon each of dried rosemary, sage, and thyme. shopping list
How to make it
- Prepare the stuffing according to directions
- Warm the 1 tablespoon olive oil in a medium size pan over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the sun-dried tomatoes, spinach, pecans, salt, pepper, and thyme.
- Cook until combined, about 2 more minutes.
- Transfer the mixture to a medium bowl.
- Add the ricotta and the cream cheese.
- Stir to combine and set aside.
- Flatten the pork slightly with a mallet.
- Spread the cheese mixture over the pork.
- Then add the stuffing.
- Roll and secure by tying the pork, or with tooth pics.
- Rub all sides with olive oil and season with salt, pepper, and spice mix.
- In a hot pan add 1 tablespoon of olive oil.
- Sear roast on all sides, including the ends.
- Roast in oven at 350 degrees until internal temperature is 180.
