Loaded Stuffed Baked Potatoes

- 4 large baking potatoes ( ex idaho Russets, or thick skinned variety ) shopping list
- olive oil to the skins shopping list
- sour cream, start with 1/2 cup shopping list
- cream cheese, start with 4 oz shopping list
- butter, start with 1/4 cup shopping list
- milk or half and half, start with 1/4 cup shopping list
- sharp cheddar cheese, start with 1 Pkg. shopping list
- green onions or chives , start with 1 bunch chopped ( green parts ) shopping list
- chopped cooked bacon, start with 6 strips shopping list
- salt, pepper or BBQ seasoning,cajun spice etc shopping list
How to make it
- wash potatoes
- pat completely dry
- rub skin with olive oil
- Bake uncovered ( no foil ) from 350-400F about 1 hour or tested done when top pricked with a fork
- When warm enough to handle hollow out :
- scoop out potato, leaving at least 1/4 inch or some potato left on the sides and bottom so skin remains intact
- Now to the scooped out potato:
- mash and add in the cream cheese, sour cream and butter to taste.
- Add enough milk to loosen mixture if needed to desired texture
- season liberally to taste.
- Stuff mixture into potato shells
- Now here are variations of preparation:
- Either top with the green onions, cooked chopped bacon and cover with cheese
- Bake additional 15 minutes at 350F
- OR simply mix in "some " of the green onion, bacon and shredded cheese and top with remainder of bacon, onion and cheese and bake the additional 15 minutes.
