Pumpkin Chili

- 1 tablespoon olive oil shopping list
- 1 large onion, chopped shopping list
- 4 garlic cloves, minced shopping list
- 3 cups pumpkin cut into pieces shopping list
- 1 1/2 cup chopped tomatoes shopping list
- 1 1/2 cup vegetable stock or white wine shopping list
- 1 can mixed beans shopping list
- 1 can garbanzo beans shopping list
- 1 tablespoon cumin seeds shopping list
- 2 tablespoons chili powder (start with 1 tablespoon, reduce or add more, depending on your tastes and also on how spicy your chili powder is) shopping list
- salt and pepper shopping list
How to make it
- In a large pot or skillet, cook chopped onion and minced garlic in olive oil for about 5 minutes on medium heat until soft. Add cumin to temper it for about 30 seconds.
- Add pumpkin, tomatoes, vegetable stock (or wine), beans and garbanzo beans.
- Add half the chili powder, stir everything well, and season with salt and pepper. Taste your chili, season some more with salt and pepper if needed.
- Add the remaining chili powder (or more), if desired. Bring to boil, make sure to stir all ingredients well together to combine flavors and spices. Reduce to simmer and cook for 30 minutes on simmer.
