Ellen's Curry With Zucchini Spaghetti

- 1 kielbasa (about 1 pound) sliced shopping list
- 2 small yellow onions, chopped shopping list
- 1 pound frozen green beans (cut variety, one inch or so logs) shopping list
- 1 can (~15oz) coconut milk shopping list
- 1 flat tablespoon mild curry powder or to taste shopping list
- ½ teaspoon garlic powder shopping list
- pinch of salt shopping list
- oil shopping list
- 4-5 medium potatoes (peeled, large cubed, boiled tender) shopping list
- Zucchini; larger ones work best for this, about 2 pounds fresh should produce enough for recipe. shopping list
- Oil or butter shopping list
- salt and pepper shopping list
How to make it
- for curry;
- In large sautee pan on medium heat add a little oil, add kielbasa, onion and green beans, stir until hot and browned slightly.
- Add spices and coconut milk, stir well, turn heat down to low and simmer, covered, for about 20 minutes or until veggies are at desired tenderness.
- Stir in potatoes
- For Zucchini
- using special peeler for making thin strips, prepare 4 cups of zucchini spaghetti.
- In large sautee pan add oil and heat on medium to high. Add zucchini, salt and pepper, toss until just tender and hot, serve immediately.
- I like the two separate on plate, but feel free to pile curry on top of zucchini.
- Options/substitutions
- This is equally good with chicken or pork, turkey, too. When using raw meats, brown a bit in oil first.
- Use roasted squash instead of potatoes for lower carbs.
