How to make it

  • for curry;
  • In large sautee pan on medium heat add a little oil, add kielbasa, onion and green beans, stir until hot and browned slightly.
  • Add spices and coconut milk, stir well, turn heat down to low and simmer, covered, for about 20 minutes or until veggies are at desired tenderness.
  • Stir in potatoes
  • For Zucchini
  • using special peeler for making thin strips, prepare 4 cups of zucchini spaghetti.
  • In large sautee pan add oil and heat on medium to high. Add zucchini, salt and pepper, toss until just tender and hot, serve immediately.
  • I like the two separate on plate, but feel free to pile curry on top of zucchini.
  • Options/substitutions
  • This is equally good with chicken or pork, turkey, too. When using raw meats, brown a bit in oil first.
  • Use roasted squash instead of potatoes for lower carbs.
