Mediterranean Style Crispy Baked Fish

- Extra Virgin Olive Oil - to oil baking rack shopping list
- 2 x 6oz Tilapia/Cod/Haddock Fillets - skinned and deboned shopping list
- 2tsp Paprika - to mix in flour shopping list
- Plain Flour - seasoned with Paprika, Salt and Pepper shopping list
- 1 Egg - lightly beaten in a bowl large enough in which to dunk the Fish shopping list
- Quantity fresh Breadcrumbs - sufficient to fully coat the fish - on a flat dish shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Pre-heat Oven to 400f/200c/180c Fan/Gas 6
- Place the fish on a flat dish and coat them with the seasoned flour, making sure they are covered on both sides;
- Dunk them in the egg mixture then coat them in the breadcrumbs, again ensuring they are well covered on all sides;
- Shake to remove any excess crumbs;
- Lightly oil an oven rack and, giving the fillets a slight spray of oil on both sides, place the fish on the rack;
- Place tray in oven and cook for some 10 minutes or so, or until the fish is just cooked through, tender and crispy;
- Don’t turn the fish on the rack;
- Can dribble touch of oil over fish at halfway stage if think a touch dry;
- OR
- Lightly oil a foil lined baking tray, spray both sides of fish with oil and lay on the tray;
- Check while cooking and move a bit to prevent sticking;
- Spray a touch more oil on top of fish and turn halfway through when as fish starts to crisp up.
- As before move the fish a bit;
- Can add additional dribble of oil if think still a touch dry;
- Serve.
