Carrot Pineapple Cake

- ====CAKE====== shopping list
- 2 cups all-purpose flour shopping list
- 2 tsp's baking powder shopping list
- 1 tsp baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1 tsp cinnamon shopping list
- 1/2 tsp allspice shopping list
- 1/4 tsp ground clove shopping list
- 1 pinch of nutmeg shopping list
- 1 cup brown sugar shopping list
- 1/2 cup granulated sugar shopping list
- 3/4 cup canola/veg. oil (use one full cup if using unsweetened coconut) shopping list
- 3 large eggs shopping list
- 1 teaspoon vanilla extract shopping list
- 2 cups of grated carrots shopping list
- 1 cup of sweetened flaked coconut (can use unsweetened but need more oil because it's very dry and will absorb more moisture) shopping list
- 1 398ml/13.5oz can of crushed pineapple, well drained shopping list
- *Optional: 1 cup walnuts, pecans or golden raisins (I use neither) shopping list
- ====Cream Cheese Icing====== shopping list
- 1/4 cup margarine or butter, softened shopping list
- 1 8oz/250 gram pkg of cream cheese shopping list
- 1 tsp of vanilla and/or lemon juice shopping list
- 2-3 cups powdered sugar shopping list
How to make it
- ======Cake======
- Preheat the oven to 350f. Grease a 9x13" cake pan (I use glass).
- Whisk the flour, baking powder, soda, salt and spices together in a large bowl and set aside.
- In a separate bowl, mix together the sugars and oil until creamy. Add the eggs one at a time, beating in between until mixed. Then stir in vanilla, carrots, pineapple and coconut.
- Make a well in the center of the dry ingredients and add the carrot mixture. Fold by hand until just mixed.
- Pour it into the prepared cake pan and bake for approx. 30-40 minutes. (25-30 minutes in two 8" round metal pans) Check with a toothpick, it will be dry or have some moist crumbles when done.
- ====Cream Cheese Icing====
- Cream the margarine or butter with the softened cream cheese. Add 2 cups of powdered sugar and 1 tsp of vanilla (and optional lemon juice) and beat with an electric mixer until creamy. Adding more icing sugar a little at a time until the frosting reaches your desired consistency and taste.
- When the cake is cool, spread the icing over the cake and chill until you're ready to eat! Enjoy :)
