How to make it

  • *Note: It would be best to make the lemon curd ahead of time and let it set up in the fridge for at least 2 hours before assembling the cake.
  • ===Eggless Lemon Curd===
  • In a sauce pan, combine all ingredients except the milk and margarine. Whisk together then place over medium-high heat, stirring constantly. Bring to boil, then reduce heat and stir until thickened, it should only take a few minutes. Remove from heat then add in the milk and margarine, stir until dissolved. Place in a bowl covered with plastic wrap, and chill for at least two hours or overnight. (*You can cheat and just use a store bought curd!!)
  • ======Cake======
  • While the curd is setting up, Preheat the oven to 350f. Line an 8x8" cake pan or 8" round pan with parchment paper, overhang two sides so it's easy to lift out later.
  • Mix the sugar with lemon zest in a large bowl with a fork. Then whisk in the flour, baking powder, soda, and salt. Make well in the dry ingredients.
  • In a separate small bowl, mix together the milk, lemon juice, vanilla and oil, pour into the well of the dry ingredients.
  • *Tip*-At this point it is better to work fast and get it in the oven as soon as it's mixed, so make sure your oven and pan are ready!
  • Stir the wet and dry ingredients together until there is no more lumps, fast but don't over work it, just until there is no lumps.
  • Pour it into the pan and bake for approx. 25 minutes. check with a toothpick, it will be dry when done. Do not over-bake or it will be dry!
  • ====Icing====
  • Cream the margarine with powdered sugar and optional lemon zest with an electric mixer. Add the lemon juice (or milk) a little at a time until the frosting reaches your desired consistency. Chill in the fridge until ready to use.
  • When the cake is cool, remove from the pan and slice in half. Spread the lemon curd between the layers and top with your icing! Enjoy :)
