How to make it

  • ======Cake======
  • Preheat the oven to 350f. Grease a 9x13" cake pan (I use glass).
  • Whisk the flour, baking powder, soda, salt and spices together in a large bowl and set aside.
  • In a separate bowl, mix together the sugars and oil until creamy. Add the eggs one at a time, beating in between until mixed. Then stir in vanilla, carrots, pineapple and coconut.
  • Make a well in the center of the dry ingredients and add the carrot mixture. Fold by hand until just mixed.
  • Pour it into the prepared cake pan and bake for approx. 30-40 minutes. (25-30 minutes in two 8" round metal pans) Check with a toothpick, it will be dry or have some moist crumbles when done.
  • ====Cream Cheese Icing====
  • Cream the margarine or butter with the softened cream cheese. Add 2 cups of powdered sugar and 1 tsp of vanilla (and optional lemon juice) and beat with an electric mixer until creamy. Adding more icing sugar a little at a time until the frosting reaches your desired consistency and taste.
  • When the cake is cool, spread the icing over the cake and chill until you're ready to eat! Enjoy :)
