Italian Dump Soup

- 2 cooked chicken breasts (boneless, skinless) - I baked mine with olive oil, salt, pepper, and a sprinkle of paprika shopping list
- 1 large onion (yellow) diced shopping list
- 1 cup carrots chopped shopping list
- 1 cup celery chopped shopping list
- 3 cloves of garlic (chopped finely) shopping list
- 4 cups chicken stock shopping list
- 1 cup water shopping list
- 1 can (15oz) fire-roasted diced tomatoes shopping list
- 1/2 tsp thyme shopping list
- 1/4 tsp oregano shopping list
- 1/4 tsp red pepper flakes shopping list
- 1/4 tsp rosemary shopping list
- 1 cup small pasta (I used ditalini) shopping list
- 2 cups chopped spinach shopping list
- 1/2 tsp ground pepper shopping list
- 1/2 tsp salt shopping list
How to make it
- Saute onion and garlic with 1 Tbsp. olive oil, in large pot or dutch oven until onions are tender to liking. Add carrots and celery to pot and cook for 2 minutes more.
- Add chicken stock, water, tomatoes, spices, and pasta. Cook until pasta is done, approximately 30 minutes.
- Stir in cooked cubed chicken, spinach, salt and pepper. Cook until spinach is wilted, about 1 to 2 minutes.
- Serving suggestion: Top with fresh Parmesan cheese. And serve with Italian bread.
