How to make it

  • Saute onion and garlic with 1 Tbsp. olive oil, in large pot or dutch oven until onions are tender to liking. Add carrots and celery to pot and cook for 2 minutes more.
  • Add chicken stock, water, tomatoes, spices, and pasta. Cook until pasta is done, approximately 30 minutes.
  • Stir in cooked cubed chicken, spinach, salt and pepper. Cook until spinach is wilted, about 1 to 2 minutes.
  • Serving suggestion: Top with fresh Parmesan cheese. And serve with Italian bread.
