Bay Scallops With Parsley Garlic Butter

- 12 bay scallops dried well on paper towels shopping list
- 1/2 tbs olive oil shopping list
- 1 tsp garlic, finely minced shopping list
- 1/4 cup dry white wine shopping list
- 2 tbs butter, or marg. shopping list
- 1/2 tsp parsley or a scant 1/4 cup fresh shopping list
- pinch cajun shopping list
- 2 tbs fresh lemon juice shopping list
- green onions, the green top only for garnish shopping list
How to make it
- This dish cooks up very quickly so prepare everything ahead of time.
- Heat the oil in a metal frying pan until the oil smokes.
- Add the scallops and cook for 30 seconds.
- Toss the scallops and add the garlic, cook for another 30 seconds.
- Add the wine, lemon juice and stir. Bring to a boil, about 30 seconds.
- Add the parsley and cajun and turn off the heat.
- Add the butter and swirl to melt.
- Season with salt and pepper to taste.
- Garnish with the green onions.
- This recipe is based on a Chef John recipe. To serve over pasta, remove the scallops, add 1/4 to 1/2 cup heavy cream and heat through. Return the scallops to the pan and serve.
