How to make it

  • This dish cooks up very quickly so prepare everything ahead of time.
  • Heat the oil in a metal frying pan until the oil smokes.
  • Add the scallops and cook for 30 seconds.
  • Toss the scallops and add the garlic, cook for another 30 seconds.
  • Add the wine, lemon juice and stir. Bring to a boil, about 30 seconds.
  • Add the parsley and cajun and turn off the heat.
  • Add the butter and swirl to melt.
  • Season with salt and pepper to taste.
  • Garnish with the green onions.
  • This recipe is based on a Chef John recipe. To serve over pasta, remove the scallops, add 1/4 to 1/2 cup heavy cream and heat through. Return the scallops to the pan and serve.
