Pasta Puttanesca

- 8 To 10 anchovy fillets if salted rinsed soaked overnight (change the water frequently) If caned in oil just use as is. shopping list
- Extra virgin olive oil enough to lightly cover the bottom of the pot shopping list
- 1 Cup red onion diced shopping list
- 4 to 5 Garlic cloves sliced shopping list
- 1 Or 2 fresh hot cherry peppers diced 0r 1 tsp hot red pepper flakes shopping list
- Sea salt Very little shopping list
- Fresh ground black pepper shopping list
- 1/4 cup white wine shopping list
- One two lb can whole plum tomatoes. shopping list
- 1 Pound pasta of choice (Fussili) shopping list
- 2 tablespoons salt packed capers, rinsed and soaked overnight in cold water (change the water frequently) If in oil just use as is. shopping list
- 1/3 cup pitted Gaeta olives sliced or chopped shopping list
- 1/3 cup coarsely chopped fresh Italian parsley. shopping list
- Freshly grated cheese for serving. shopping list
How to make it
- Have a pot of water on the stove ready to boil.
- Heat the pot on medium high flame. Add the oil when the oil is hot .
- Add the anchovy and allow it to dissolve.
- Add the onion and the hot pepper. use as much pepper as you like according to your taste.
- After the onion begins to color about five minutes add the garlic saute another minute or two and add a light touch of salt and black pepper.
- Add the wine allow it to reduce.
- Add the tomatoes and raise the flame. Bring to a boil .
- Add the capers and the sliced olives and continue to cook at a brisk boil for another 12 to fifteen minutes.
- Boil the pasta in the salted boiling water and remove well just under cooked.
- Add it to the pot of sauce cook until you reach the desired texture add the parsley
- Plate and serve with fresh grated cheese.
