How to make it

  • Combine 300ml/10fl oz of the water with sugar and chocolate in a saucepan and, stirring continuously, slowly bring to the boil;
  • Remove from the heat;
  • In a bowl, mix the cocoa powder with the remaining water to a smooth paste;
  • Pour this into the saucepan and, whisking vigorously and continuously, heat over a medium heat to bring back to the boil;
  • Reduce heat to low and simmer, uncovered, for some 5 to 10 minutes or so until the sauce thickens and coats the back of a spoon;
  • Note: Do not allow the sauce to boil over;
  • When ready, strain and allow to cool a little;
  • The sauce may be served hot or cold and will keep well in fridge for up to 1 week if stored in an airtight container.
