Chocolate Sauce

- 225g/7¼oz caster sugar shopping list
- 100g/3½oz Dark chocolate - chopped shopping list
- 25g/¾ oz Quality cocoa powder - sifted shopping list
- 350ml/11¾fl oz Water shopping list
How to make it
- Combine 300ml/10fl oz of the water with sugar and chocolate in a saucepan and, stirring continuously, slowly bring to the boil;
- Remove from the heat;
- In a bowl, mix the cocoa powder with the remaining water to a smooth paste;
- Pour this into the saucepan and, whisking vigorously and continuously, heat over a medium heat to bring back to the boil;
- Reduce heat to low and simmer, uncovered, for some 5 to 10 minutes or so until the sauce thickens and coats the back of a spoon;
- Note: Do not allow the sauce to boil over;
- When ready, strain and allow to cool a little;
- The sauce may be served hot or cold and will keep well in fridge for up to 1 week if stored in an airtight container.
