Hearty and filling dinner. Similar to a quiche but without the egg/custard filling. Great way to use up any spare eggplant.

Ingredients
  • 1 9" Unbaked pie crust
  • 1/4 c Butter
  • 2 c Cubed Eggplant
  • 3/4 lb Ground Beef
  • 1/2 c Chopped Onion
  • 1 c Garlic, minced
  • 8oz Tomato Sauce
  • 1/4 c Chopped Celery Leaves
  • 1 tsp. Oregano
  • 1 TBSP chopped Parsley
  • 1/8 tsp ground pepper
  • 1/2 c Shredded Mozzerella

Directions
  1. Preheat oven to 375.
  2. Get Pie Crust ready
  3. Melt Butter over Medium Heat. Add eggplant and cover, cooking for 5 minutes. Set aside.
  4. Add beef, onion, and garlic, cooking until meat browns. Drain when done.
  5. Add tomato sauce, celery leaves, parsley, oregano, and peppers. Cook, stirring constantly for 5 minutes.
  6. Stir in eggplant.
  7. Cool slightly, pour in prepared pie crust.
  8. Bake for 45 minutes.
  9. Sprinkle with cheese and bake for 3 minutes or until cheese melts.
