How to make it

  • In a large bowl, add the mash, shallots, peppers and parsley;
  • Spray a little oil in a non-stick frying pan, heat on medium low and add the bacon;
  • Cook 3 to 5 minutes or so until crisp;
  • Break into bits and add to the bowl;
  • Season the mixture to taste and combine everything together well
  • Roll into balls to size preferred, coat in cornflakes and form into burger shapes of desired consistency;
  • Using oil left in pan and more spray if necessary, sufficient to cook the burgers, add them to the pan and, on low/medium heat, cook them steadily until golden brown underneath;
  • Spray top of burger with more oil, turn and cook until cooked through and golden brown;
  • If using add an egg on top of each burger and Serve

    Nice alternative to hash browns or cottage fries.Maybe cook the spuds the night before. Good post.
