Sunday Breakfast Veggies

- • 2 Tbs. bacon grease. Can sub olive oil. shopping list
- • 1 Tbs. butter. shopping list
- • 1 lg. or 2 med. russet potatoes, scrubbed well. Peel if you like, I don’t. Sliced. shopping list
- • 1 lg. or 2 med. red or yellow bell peppers, seeded and cut into strips, top to bottom. shopping list
- • 1 medium zucchini squash, scrubbed and ¼ in. slices. shopping list
- • ½ tsp. basil. Optional. shopping list
- • 1 tsp. parsley. Optional. shopping list
How to make it
- 1. Prep all the stuff.
- 2. Heat bacon grease in a large skillet and fry the potatoes until about half done.
- 3. Add the bell pepper and cook until almost done.
- 4. Add the butter and the zucchini and cook, stirring gently for 2-3 minutes. Try not to mash all of these together. You want the flavors to blend but the veggies to remain whole and distinct.
- 5. Remove to paper towels or newspaper to drain.
- 6. Serve warm.
- If you feel this really must have onions, slice those and cook with the potatoes.
