  • 1. Prep all the stuff.
  • 2. Heat bacon grease in a large skillet and fry the potatoes until about half done.
  • 3. Add the bell pepper and cook until almost done.
  • 4. Add the butter and the zucchini and cook, stirring gently for 2-3 minutes. Try not to mash all of these together. You want the flavors to blend but the veggies to remain whole and distinct.
  • 5. Remove to paper towels or newspaper to drain.
  • 6. Serve warm.
  • If you feel this really must have onions, slice those and cook with the potatoes.
