Porcupine Meatballs

- 1 lb ground beef shopping list
- 1 cup uncooked long grain rice shopping list
- 1 egg slightly beaten shopping list
- 2 Tbsp worcestershire sauce divided shopping list
- 1 tsp garlic powder shopping list
- 1 Tbsp fresh parsley chopped or 1/2 Tbsp dried parsley shopping list
- 2 Tbsp finely chopped onions shopping list
- 1 Tbsp tomato paste shopping list
- 1/2 tsp salt shopping list
- dash of black pepper shopping list
- 1 (10 1/2 ounce ) can of tomato soup shopping list
- 1 cup chicken broth shopping list
How to make it
- Preheat oven to 350 degrees
- Combine egg, rice, parsley, onion, salt, pepper, garlic powder, tomato paste, Worcestershire sauce. Add the ground beef and mix well
- Shape mixture into about 20 small meat balls
- Mix soup, broth, and Worcestershire in a bowl.
- Brown meatballs on all sides in a oven proof skillet
- Pour soup mixture over meatballs and bring to a boil then put into the oven covered for 40 minutes or until rice is soft. gently stir once or twice.
- *If you turn the oven off after 40 min and leave the meatballs in the oven for approx 15 min they rice will be cooked completely through*
