Carrot Pineapple Cake

- 2 cups all-purpose flour shopping list
- 2 teaspoons baking soda shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons ground cinnamon shopping list
- 1 3/4 cups white sugar shopping list
- 1 cup vegetable oil shopping list
- 3 eggs shopping list
- 1 teaspoon vanilla extract shopping list
- 2 cups shredded carrots shopping list
- 1 cup flaked coconut shopping list
- 1 cup chopped walnuts shopping list
- 1 (8 ounce) can crushed pineapple, drained shopping list
- 1 (8 ounce) package cream cheese shopping list
- 1/4 cup butter, softened shopping list
- 2 cups confectioners' sugar shopping list
How to make it
- Prep 30 m
- Cook 45 m
- Preheat oven to 350 degrees F (175 degrees C).
- Grease and flour a 9x13 inch pan.
- Mix flour, baking soda, baking powder, salt and cinnamon.
- Make a well in the center and add sugar, oil, eggs and vanilla.
- Mix with wooden spoon until smooth. Stir in carrots, coconut, walnuts and pineapple.
- Pour into 9x13 inch pan.
- Bake at 350 degrees for about 45 minutes.
- Don't panic, the center will sink a little.
- Allow to cool.

- To make the frosting:
- Cream the butter and cream cheese until smooth.
- Add the confectioners sugar and beat until creamy.
- This carrot cake is dense and delicious, a real crowd-pleaser.

I have been making this exact cake since 2002! I'm looking at my printed out copy from then, and remembered the mistake.
I think the original submitter (Linda) made a mistake and it should read 2 tsp baking powder and 1 tsp soda. That's why the ...moreCosmicmother in Western loved it
