Frijoles Borracho

- 1 lb pinto beans (dried) shopping list
- 12-oz bottle of beer (lager) shopping list
- 4 slices of bacon shopping list
- 2 cloves of garlic shopping list
- ½ yellow onion shopping list
- 1 jalapeño shopping list
- 14.5-oz can of tomatoes (diced) shopping list
- 1 T chili powder shopping list
- ½ t cumin (ground) shopping list
- cilantro shopping list
- black pepper shopping list
- salt shopping list
How to make it
- 1 Bring 4 c water plus the beer to a boil over high heat.
- 2 Chop the onion, bacon and jalapeño, and mince the garlic. Add to the pot along with the tomatoes, beans and dry spices (except salt).
- 3 Reduce the heat and simmer, covered, over very low heat for at least 3 hrs or until the beans are tender.
- 4 Finish with chopped cilantro, and season to taste.
