How to make it

  • Using s pastry brush, coat the insides of 8 muffin tins (I prefer to use glass custard cups, like my great-grandma did).with1 tablespoon of the melted butter (no margarine here, please!). Place the custard cups - or the muffin tins - in a 400 degree oven to heat for 5 minutes. If using glass custard cups, set them on a heavy duty, commercial grade baking sheet.
  • Beat the eggs until light yellow.
  • Add the warmed milk to the well-beaten eggs (I use a 4 cup measuring cup, then you can use that to mix all ingredients in).
  • Add flour, salt and remaining melted butter..
  • Pour batter into the pre-heated cups or muffin tins, filling about 1/2 full.
  • Return pan to oven and bake for about 35 minutes, until golden brown (no opening the oven door to take a peak, as that may deflate the popovers!).
  • Serve warm, with plenty of butter and honey or jam!
