Quick And Easy Carrot And Chickpea Salad

- 3 tablespoons olive oil shopping list
- 2 tablespoons fresh lemon juice shopping list
- 1 clove garlic, finely chopped shopping list
- 1 teaspoon ground cumin shopping list
- 1/4 teaspoon salt shopping list
- freshly ground black pepper to taste shopping list
- 2 cups shredded carrots shopping list
- 1 (14 ounce) can chickpeas (garbanzo beans)drained and rinsed shopping list
- 2 tablespoons fresh chopped parsley shopping list
- 2 tablespoons chopped white onion shopping list
How to make it
- Whisk olive oil, lemon juice, garlic, cumin, salt,and black pepper together in a bowl until dressing is smooth.
- Add carrots, chickpeas,parsley and onion and toss to coat.
- You can use red or green onion in place of white onion.
- Eat as is or put in the fridge for a while.
- This will keep for 2 days in the fridge.
