How to make it

  • Whisk olive oil, lemon juice, garlic, cumin, salt,and black pepper together in a bowl until dressing is smooth.
  • Add carrots, chickpeas,parsley and onion and toss to coat.
  • You can use red or green onion in place of white onion.
  • Eat as is or put in the fridge for a while.
  • This will keep for 2 days in the fridge.
