How to make it

  • Cut cake layer into 2 layers with a bread knife. Choose an 8 cup/ 2L gently rounded bowl. Ease 1 layer inside the bowl (I put the soft side of the layer facing out as opposed to the harder baked top and bottom), pushing down to form a shell. If it breaks, fit it in as best you can. Mix orange juice and brandy together and sprinkle over bottom shell.
  • Whip the cream and sugar together until stiff.
  • Fold in nuts, cherries and chocolate. Spoon into cake shell. Trim the top layer of cake if it needs to in order to fit on nicely and place over cream mixture. Chill at least four hours. Unmold onto serving plate. Slice into wedges for some very lucky people.
