Ingredients

  • 6 Tbs butter shopping list
  • 3 to 4 garlic cloves, minced (I used 4 - if you don't like garlic, better use less!) shopping list
  • one pound large peeled, deveined and cooked shrimp (mine were 21/25)* shopping list
  • 2 cups of cooked rice (I used Minute Rice) shopping list
  • 2 Tbs chopped fresh parsley shopping list
  • salt and fresh ground pepper, to taste shopping list
  • Optional: juice of one half lemon and/or shredded parmesan cheese shopping list
  • *I peeled the shrimp, put them in a four cup measuring cup, filled the cup with water and microwaved on high for 3 minutes, stirring a couple of times. Your microwave may vary. Check to see that shrimp are cooked. shopping list

How to make it

  • In a large skillet, melt butter over medium heat. Add garlic and cook for 2 to 3 minutes, stirring frequently until very lightly browned. Do not burn the garlic.
  • Add the cooked shrimp and cook for 1 minute, stirring frequently. Add prepared rice, parsley, salt and pepper and mix until well combined. Heat through.
  • Remove from heat. Squeeze half of a lemon over all and/or garnish with parmesan cheese. Serve immediately.
