Italian Stir-fry Recipe
This is my father's dish. He calls it "goulash" but I like to think of it as an Italian stir-fry.

Ingredients
  • 1 tbls olive oil
  • 1/2 medium onion, cut into medium-thin rings
  • 1 red bell pepper, cut into medium strips
  • 1 green bell pepper, cut into medium strips
  • 1 clove garlic
  • 2 medium zucchinis, cut into 1/3 inch rounds
  • 3 Italian sausage links, cut into 1/2 inch rounds
  • 1 pinch red pepper flakes (optional)
  • Parmesan cheese (optional)

Directions
  1. Heat oil in large skillet or wok.
  2. Saute onion, bell peppers and garlic on medium heat for approximately 5 minutes.
  3. Add zucchini, sausage and red pepper flakes to skillet, cook, stirring occasionally, until sausage is no longer pink in the middle (approximately 10 minutes).
  4. Top with Parmesan cheese and serve with bread and butter.
  5. You could make this dish really healthy if you used turkey Italian sausage and omitted the Parmesan cheese, though you might have to increase the amount of olive oil to keep the veggies from sticking.

Sounds good. I sit around a lot it the winter, but I like to wok. ha. I'll make it this week end.
