How to make it

  • Heat oil in large skillet or wok.
  • Saute onion, bell peppers and garlic on medium heat for approximately 5 minutes.
  • Add zucchini, sausage and red pepper flakes to skillet, cook, stirring occasionally, until sausage is no longer pink in the middle (approximately 10 minutes).
  • Top with Parmesan cheese and serve with bread and butter.
  • You could make this dish really healthy if you used turkey Italian sausage and omitted the Parmesan cheese, though you might have to increase the amount of olive oil to keep the veggies from sticking.
