How to make it

  • Chop bacon and fry until golden brown and crisp.
  • Wash leeks and slice fine, using as much of the green as possible.
  • Add to the bacon fat and stir over medium heat, about 2 minutes.
  • Add chicken stock.
  • Melt butter in a frying pan.
  • Add barley and stir constatnly until it becomes a nutty brown colour.
  • Add to soup.
  • Bring to boil, lower the heat and simmer for one hour.

    Love this! I have never made a barley soup and I just adore barley..on my list to try soon..after all of this HOT weather goes bye bye:)
