Leek And Barley Soup

- 4 bacon slices shopping list
- 2 large leeks shopping list
- 6 cups chicken stock (I use homemade) shopping list
- 1 tbsp. butter shopping list
- 1/4 cup pearl barley shopping list
How to make it
- Chop bacon and fry until golden brown and crisp.
- Wash leeks and slice fine, using as much of the green as possible.
- Add to the bacon fat and stir over medium heat, about 2 minutes.
- Add chicken stock.
- Melt butter in a frying pan.
- Add barley and stir constatnly until it becomes a nutty brown colour.
- Add to soup.
- Bring to boil, lower the heat and simmer for one hour.
