- 1 packet Knox gelatine powder shopping list
- One can (354 ml) fat free evaporated milk shopping list
- 1/3 cup chia seeds shopping list
- 1/3 cup honey shopping list
- 1/4 cup spoonable stevia shopping list
- 1/4 cup cocoa powder shopping list
- 1/2 cup whey powder shopping list
- 1 teaspoon vanilla shopping list
- 1 tablespoon cinnamon shopping list
- 7 cups puffed wheat shopping list
- 1/2 cups oatmeal flakes shopping list
- 1/2 cup chopped peanuts shopping list
- 1/4 cup sunflower seeds shopping list
- 1/4 cup currants shopping list
- 1/2 cup chocolate chips shopping list
How to make it
- Prepare a cookie tray with a sheet of parchment or wax paper.
- In a large pot pour in the evaporated milk and sprinkle the gelatine and the chia seeds on top.
- Stir slowly while bringing to a simmer, add honey. Simmer for ten minutes.
- Remove from the heat.
- Stir in stevia, cocoa, whey, vanilla, and cinnamon.
- Pour the puffed wheat and oatmeal over top and fold in the syrup until well coated.
- Stir in the currants, nuts, and sunflower seeds.
- Pour the mixture on to the cookie tray.
- Sprinkle with the chocolate chips and flatten to firmness with a spatula.
- Score the sheet in to 24 bars (6 scores one way and 4 scores the other).
- Refrigerate for an hour to firm up, then individually wrap for portability.
- I store these bars in a bowl in my refrigerator and pop one or two in to my lunch bag.
