Sweet Potatoe And Acorn Squash Mash With Pumpkin Pie Spice.

- 1 medium sweet potatoe shopping list
- 1 small acorn squash shopping list
- 1 small yellow or white onion shopping list
- 3 small garlic cloves( or less if you prefer) shopping list
- Olive Oil shopping list
- 1/2 teaspoon pumpkin pie spice shopping list
How to make it
- Heat oven to 375 degrees
- Chop the potatoe and squash in mediun chunks.
- Dice the onion, the garlic is fine in cloves as it mashes well.
- Toss the sweet potatoe, onion, garlic and squash in olive oil to coat.
- Roast in hot oven for 25-30 min. or until fork tender.
- When cooked mash, sprinkle in the pumpkin pie spice and mix till blended.
- Salt and pepper if you choose.
- I was going to get the pepper out but i saw the pumpkin pie spice and thought Why not? I added the pumpkin pie spice to the potatoe and squash
- mixed it, tasted it and decided the flavor is quite tasty, to me it did not need salt and pepper.
- This was a experiment that turned out very nicely.
- It is a good side with roast beef, and probably with any meat.
- If you don't care for diced onion, it can be grated in instead of diced.
