How to make it

  • Place 1/2 of each chopped vegetable ingredients into a blender or food processor.
  • Add the liquid ingredients (vinegar, olive oil, tomato juice and Worcestershire Sauce).
  • Pulse until a thick soupy broth is formed.
  • Add the rest of the chopped vegetables.
  • Season to taste.
  • Chill for at least 1 hour so that the flavors blend.
  • Serve with a sprinkling of cilantro and a slice of lime.

    A really nice Gazpacho. I'll add a Tbs. of lemon juice and a few sliced mushrooms but that's just me. Great ingredient list and I like the method; Smooth yet a bit chunky. Great post and thanks.
