Gazpacho

- 3 lbs ripe tomatoes, peeled, seeded and chopped shopping list
- 1/2 large English Cucumber, peeled and chopped shopping list
- 1 cup celery, chopped shopping list
- 1/2 cup red pepper, chopped shopping list
- 1/2 cup red onion, chopped shopping list
- 1 tsp minced fresh garlic shopping list
- 1 T chopped and seeded jalepeño shopping list
- 3 T red wine vinegar shopping list
- 1/4 cup good quality olive oil shopping list
- 12 oz. tomato juice shopping list
- 1 T Worcestershire Sauce shopping list
- salt, pepper and ground coriander shopping list
- 3 T chopped cilantro shopping list
- 1 lime cut into slices shopping list
How to make it
- Place 1/2 of each chopped vegetable ingredients into a blender or food processor.
- Add the liquid ingredients (vinegar, olive oil, tomato juice and Worcestershire Sauce).
- Pulse until a thick soupy broth is formed.
- Add the rest of the chopped vegetables.
- Season to taste.
- Chill for at least 1 hour so that the flavors blend.
- Serve with a sprinkling of cilantro and a slice of lime.
