How to make it

  • Heat cast iron griddle, brushing with a small amount of coconut oil, at medium low heat.
  • Meanwhile beat together milk, eggs, truvia, salt and vanilla.
  • Measure flour, whey isolate and baking powder over top of the wet ingredients and then whisk together quickly.
  • Pour the maple syrup and fancy molasses in to a snack size ziplock bag, and pour cinnamon and nutmeg over top.
  • Close the bag and massage the syrups and spices together. The molasses allows the syrup to pour slowly enough to make a pleasing swirl. Cut 1/8 inch tip off one corner to drizzle the syrup.
  • Pour 1/2 cup batter on to the heated grill. Wait a few moments to allow the batter to set slightly, then starting in the center, drizzle the syrup in an outward spiral.
  • When the first side is browned lightly, flip and lightly brown the second side.
  • Serve with Greek yogurt, more syrup, and pomegranate.
