Mac And Cheese With Cauliflower

- 1 1/2 c fresh coarse bread crumbs (Panko) shopping list
- 1 T butter, melted shopping list
- 2 T minced fresh parsley shopping list
- Sea salt and pepper to taste shopping list
- 4 oz pancetta julienned shopping list
- 3/4 lb. cauliflower cut into 1/2 inch florets shopping list
- 4 T butter shopping list
- 2 T all purpose flour shopping list
- 1 T white wine shopping list
- 1 3/4 c milk shopping list
- 1 c shredded fontina cheese shopping list
- 1 1/2 c shredded Gouda cheese shopping list
- 1/8 tsp cayenne pepper shopping list
- pinch nutmeg (not as much as 1/8 tsp) shopping list
- 1/4 c heavy cream shopping list
- 1/2 lb. macaroni, cooked until al dente shopping list
How to make it
- Preheat oven to 375ยบ
- In a bowl, combine bread crumbs, melted butter, parsley, 1/2 tsp salt and 1/4 tsp black pepper
- In a 3-qt. pot over medium heat, cook pancetta for 8 minutes, transfer to small bowl and reserve fat.
- Cook cauliflower in small batches 10-12 minutes, adding a 1-2 T of butter as needed.
- Transfer to a bowl
- Deglaze with 1 T water and add to cauliflower.
- Wipe out the pot, begin with a dry pot
- In the same pot over medium heat, melt 4 tsp butter.
- Add flour, cook gently for 3 minutes.
- Whisk in wine, then add milk a little at a time till combined, stirring constantly for 10 minutes as it thickens.
- Stir in cheeses, 1 tsp salt, 1/2 tsp black pepper, cayenne, nutmeg, and cream.
- Finally stir in cooked pasta, pancetta and cauliflower.
- Top with bread crumb mixture
- Bake for 30 minutes, broil for 4-5 minutes till lightly browned, Serves 5-6
