How to make it

  • Pour enough oil into a ten inch skillet to just cover the bottom.
  • Add apples, sauté for a few minutes until just crisp but not raw.
  • Add onion, cranberries, parsley, chicken and pecans or peanuts.
  • Add to cooked rice along with spices and peanut butter.
  • Add broth if needed.
  • Mix and serve.

    Feb 9/17 wow what a fantastic recipe. This is quick and easy to pull together and would be great after a busy day. I did not have fresh parsley but used freeze dry and it was fine. Will be making again.
