Beef Vegetable Soup

- 2 T. Olive Oil shopping list
- 1 small minced Onion (about 1/2 cup) shopping list
- 1 generous cup diced carrots shopping list
- 1 generous cup diced celery shopping list
- 1 pound Ground beef shopping list
- 1 generous cup diced Potato shopping list
- 1 (15 oz) can Seasoned Diced Tomatoes shopping list
- 1 (32 oz) carton beef broth shopping list
- 2 t. beef Bouillon (Better than Bouillon base) shopping list
- 1/2 cup Ditalini pasta (or other small pasta) shopping list
- 1/2 cup frozen Baby Lima beans (or Peas) shopping list
- 1/4 t. balsamic vinegar shopping list
How to make it
- 1. In soup pot, heat olive oil and add onion, carrot, celery, and ground beef.
- 2. Sautee on medium heat until beef is browned and broken up well.
- 3. Add potato, diced tomato (I like to blend my diced tomato for a smoother texture), beef broth, beef bouillon, and pasta. Bring to boil and reduce to simmer until vegetables are tender and pasta is cooked.
- 4. Add lima beans and Balsamic vinegar. Adjust to taste with salt and pepper or additional bouillon.
- Seasoned diced tomatoes I use are seasoned with Basil, Garlic, Oregano, and Thyme.
