How to make it

  • 1. In soup pot, heat olive oil and add onion, carrot, celery, and ground beef.
  • 2. Sautee on medium heat until beef is browned and broken up well.
  • 3. Add potato, diced tomato (I like to blend my diced tomato for a smoother texture), beef broth, beef bouillon, and pasta. Bring to boil and reduce to simmer until vegetables are tender and pasta is cooked.
  • 4. Add lima beans and Balsamic vinegar. Adjust to taste with salt and pepper or additional bouillon.
  • Seasoned diced tomatoes I use are seasoned with Basil, Garlic, Oregano, and Thyme.
