Jordan Marsh Blueberry Muffins

These are the famous Jordan Marsh Blueberry Muffins... The recipe comes from John Pupek the Man who made the Muffins for many years...They can be found online shared by WCVB5abc by the legendary Baker himself
Ingredients
- 1/2 Cup butter shopping list
- 2 Cups Flour ( half bread flour and half pastry flour) shopping list
- 1 Cup Sugar shopping list
- 2 Eggs shopping list
- 2 tsp baking powder shopping list
- 1/2 Cup Milk shopping list
- 1/2 tsp Salt shopping list
- 2 1/2 Cups blueberries shopping list
- 1 tsp Vanilla shopping list
How to make it
- Cream butter and sugar until light and fluffy with vanilla. Add eggs gradually 1 at a time and mix until blended. Sift dry ingredients and add to creamed mixture alternately with milk. Mash 1/2 cup blueberries and stir into batter by hand. Gently Add rest of the berries mixing with a little flour to coat prior to adding to batter. Grease muffin tins well with butter as well as greasing top of pan so muffins do not stick... Pile mixture high in each cup and sprinkle tops generously with sugar. Bake in a preheated 375* oven for 30 minutes....
