Slow Cooker Black Bean Stew

- 500 gr (1 pound) black beans, soaked overnight or for 8 hours minimum shopping list
- 2 shallots, finelly diced shopping list
- 2 cloves of garlic shopping list
- 200 gr portuguese linguiça, diced - you can use any other smoked sausage of your preference shopping list
- 1 large kielbasa, diced, I used a mustard one shopping list
- 2 tbsp tomato puree shopping list
- 2 tsp smoked paprika shopping list
- 1 bay leaf shopping list
- 1 large carrot, cut into bite size pieces shopping list
- 1 tbsp olive oil shopping list
How to make it
- Start by rinsing the black beans. The reason I do this is because I use the soaking water.
- Put the beans on a large container and add water until the beans are well covered. Depending on the quality of the beans you might need to add more water for the soaking process - it is not an exact science.
- After at least 8 hours pour the beans and water in the slow cooker and add all the remaining ingredients. See Photo
- Put on low for 6 hours.
- After it is done check if the beans are soft, if not allow 2 more hours. This has happened to me before. Again, it really depends on the quality of the beans.
- Season with salt if needed - this will depend on the salt content of your sausages.
- Serve with rice.
All ingredients ready to slow cook.
