How to make it

  • Start by rinsing the black beans. The reason I do this is because I use the soaking water.
  • Put the beans on a large container and add water until the beans are well covered. Depending on the quality of the beans you might need to add more water for the soaking process - it is not an exact science.
  • After at least 8 hours pour the beans and water in the slow cooker and add all the remaining ingredients. See Photo
  • Put on low for 6 hours.
  • After it is done check if the beans are soft, if not allow 2 more hours. This has happened to me before. Again, it really depends on the quality of the beans.
  • Season with salt if needed - this will depend on the salt content of your sausages.
  • Serve with rice.
