Cranberry Lime Bars

- CRUST shopping list
- 1 1/2 cups unbleached all-purpose flour shopping list
- 1/2 teaspoon salt shopping list
- 1/2 cup unsalted butter, softened shopping list
- 1/3 cup sugar shopping list
- 1/2 teaspoon vanilla extract shopping list
- 1 egg shopping list
- 1/4 cup dried cranberries, coarsely chopped (use a good quality, plump variety) shopping list
- LIME CURD shopping list
- 1/2 cup sugar shopping list
- Grated zest of 2 limes shopping list
- 1/2 cup fresh lime juice ~approx. 4 limes~(do not use the bottled stuff) shopping list
- 1/4 cup heavy cream (whipping cream) shopping list
- 1/4 cup butter shopping list
- 4 eggs shopping list
How to make it
- Preheat the oven to 350f. Line a 7x11"/8x12" cake pan with parchment paper, overhanging two sides so it's easier to lift out later.
- Cream the butter with sugar, beat in the egg and vanilla until light and fluffy. Stir in the flour and chopped dried cranberries and press into the cake pan. Bake for approx. 20-25 minutes, until golden around the edges and the center is dry.
- While the crust is baking, make the Lime Curd:
- Pour all the ingredients into a saucepan over medium heat, Whisking Constantly! Whisk until the mixture has just thickened and is on the verge of boiling. Remove from heat.
- Pour the lime curd over the freshly baked crust, and put it back in the oven for 12 minutes. When the pan is cool enough to handle, cover and chill for two hours. Remove from the pan and cut into 12 bars.
- ~I've also made this with lemon instead of Lime. But Lime is my favorite citrus!
- ~You can leave out the dried cranberries, or try it with other dried berries.
