Ultimate Peanut Butter Chocolate Cheesecake

- Peanut butter cookie layer: shopping list
- 1 cup unsalted butter, soft shopping list
- 1 cup sugar shopping list
- 3/4 cup light brown sugar, lightly packed shopping list
- 2 large eggs, RT shopping list
- 1 cup smooth peanut butter shopping list
- 3 cups AP flour shopping list
- 1 tea. baking soda shopping list
- 1 tea. baking powder shopping list
- 1/2 tea. salt shopping list
- Cheesecake: shopping list
- 1 pound cream cheese, RT shopping list
- 3/4 cup sugar shopping list
- 3 large eggs shopping list
- 1 cup peanut butter, smooth or chunky shopping list
- 1 tea. melted butter shopping list
- 1 tea. vanilla shopping list
- 14 oz. sweetened condensed milk shopping list
- 1 cup mini semisweet chips shopping list
- Ganache shopping list
- 1 1/2 cups heavy cream shopping list
- 12 oz. semisweet chocolate, chopped fine shopping list
How to make it
- Crust: using 2 cups of cookie crumb, 1/4 cup sugar, and 6 Tbsp. of butter:
- mix completely and press unto sides and bottom of buttered 10"
- spring-pan. Set in freezer for at least 1 hour.
- Brownie layer: Preheat oven to 350^.
- Using a stand mixer, beat butter and sugar in high speed for 2 minutes.
- Reduce speed to low and gradually flour and cocoa powder.
- Add eggs one at a time, mixing thoroughly
- Mix in chocolate syrup.
- Fold in PB chips with spatula.
- Pour into prepared pan, and level with spatula.
- Bake at 350^ for 45-50 minutes, let cool completely.
- PB cookie layer:
- In a large bowl, beat butter and sugars until smooth.
- Add eggs and peanut butter.
- Gradually add flour, baking soda, baking powder, and salt.
- Roll dough into log, wrap in plastic and chill for at least 1 hour.
- Cut log into 1/2" slice.
- Folls and place over cooled brownie.
- Cheesecake Preheat oven to 300^
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, then peanut butter, melted butter, and vanilla.
- Pour in SC milk and blend completely.
- Fold in chips with spatula, evenly.
- Pour filling over cookie layer;tap pan on counter to release any bubbles .
- Bake at 300^ for 55-65 minutes, or until center is set. Let cool completely in pan, then chill.
- Ganache
- In a small saucepan, bring cream to simmer.
- Add chocolate, cover and remove from heat.
- After 5 minutes, remove cover and whisk until smooth.
- Spread evenly over cooled cake, let run down sides.
- Top with finely chopped Butterfinger pieces.
