Buttered Monkey Cheesecake

- Crust: shopping list
- 2 cups cookie crumbs: vanilla, butter, or Ritz crackers shopping list
- 1/3 cup light brown sugar, lightly packed shopping list
- 6 Tbsp. butter, melted shopping list
- Filling: shopping list
- 2 pounds cream cheese, softened shopping list
- 1 1/4 cups sugar shopping list
- 1/4 cup AP flour shopping list
- 5 large eggs shopping list
- 1/2 tea. butter extract shopping list
- 3 Tbsp. light rum shopping list
- 1/4 cup banana flavor liquor shopping list
- 1 tea. roasted cinnamon shopping list
- 1/2 tea. ground cardamom shopping list
- 3/4 cup heavy cream shopping list
- 3/4 cup butterscotch chips shopping list
- 1/4 cup semisweet chips shopping list
How to make it
- Crust: Butter sides and bottom of 9-10" spring-pan.
- Mix ingredients thoroughly, pour into pan.
- Press evenly onto sides and bottom of pan, set in freezer.
- Filling: Preheat oven to 450^.
- In a large bowl, beat cream cheese until smooth using slowest speed.
- Add sugar and flour.
- Add eggs one at a time, scraping down bowl after each.
- Add cinnamon, cardamom, butter extract, rum, and banana liquor.
- Fold on chips with spatula.
- Pour into prepared pan, tap lightly onto counter to release any bubbles.
- Bake at 450^ for 15 minutes.
- Reduce temp. to 250^ and continue baking for 1 hour.
- Remove from oven, let cool completely, chill until ready to serve
