How to make it

  • Peel and cut the potatoes into 1 inch pieces, place in a large pot with enough water to cover the potatoes. Add in the smashed cloves of garlic, thyme sprigs and salt. Bring to a boil over high heat, reduce heat and boil gently for 15-20 minutes until the potatoes are cooked through.
  • Pull out the thyme sprigs and drain the potatoes. For extra garlicky potatoes leave in the garlic cloves, for subtle flavor take them all out. I like to keep two cloves in. Mash the potatoes with any cloves of garlic you desire. Add in the mustard, olive oil, butter and milk or chicken stock and stir until everything is combined. Season with salt and pepper to taste. (you may need more liquid, so adjust to your desired consistency)
  • ~I sometimes add rosemary sprigs and/or a bay leaf to the cooking water as well. Fresh chopped chives are nice in the final dish too.

    One word Delicious!!!!
    I used 4 cloves of garlic, rosemary, and horseradish,and because of dairy issues lactose free milk and Earth balance in place of butter.I took the garlic out before i mashed them, and the horseradish gave the potatoes a nice tang.A keeper for sure.
