Lemon Cheese Squares

These are simple lemon cream cheese squares that you can whip up in a under an hour using a cake mix. I have trouble finding a cake mix with pudding in it these days but they work fine with just a regular. They are addictive. Read more This recipe has been around for at least 40 years. See less
Ingredients
- 1 lemon (with pudding in the mix) cake mix shopping list
- 1 8 oz cream cheese (softened) shopping list
- 1 1/3 c. sugar shopping list
- 1 t. lemon juice shopping list
- 2 eggs shopping list
- 1/3 c. salad oil shopping list
How to make it
- Mix dry cake mix, 1 egg and 1/3 c. oil until crumbly. Reserve 1 c.
- Pat mixture lightly in an ungreased pan.
- Bake 15 minutes at 350 degrees.
- Beat cheese, sugar , lemon juice and egg until light and smooth. Spread over baked layer. Sprinkle with reserved crumbs.
- Bake 15 minutes longer.
- Cook. Cut into squares.
