A girlfriend had given me this recipe. It was her mothers. It is thrown togehter in no time. She said this was one of her favorite recipes. Our children use to go to school together.

Ingredients
  • 1 cup sugar
  • 1/2 cup shortening, (she told me to uses butter)
  • 1 egg
  • 1 teaspoon vanilla
  • 1 tspoon cinnamon
  • 1 level teaspoon baking soda
  • 1 cup flour
  • 2 cups chopped apples
  • 1/2 cup nuts or coconut, or both

Directions
  1. Cream together sugar, shortening, egg and vanilla.
  2. Sift togther cinnamon, soda and flour.
  3. Mix both ingredients togther, then add apples and coconut.
  4. Spread into 9 x 9 greased pan.
  5. Bake 35 to 40 minutes at 350 degrees.
  6. Serve this Hot or cold. Either way it is great!
  7. You can serve it warm with vanilla bean ice cream.
