How to make it

  • Mix Chili bean paste, garlic, ginger, soy sauce, honey and the juice from the lemon (keep the halves) in a small bowl until thoroughly blended.
  • Set aside a couple of tablespoons of the marinade/rub for basting.
  • Put a few spponfuls of the rub into the cavity of the chicken and rub throughout.
  • Stuff the cavity with the lemongrass and the leftover lemon halves.
  • Rub the entire outside of the chicken with the rub generously getting some in between the skin and the meat as well.
  • Place the chicken in a roasting pan.
  • Cover and bake at 350F for an hour or so and then remove the cover.
  • Add reserved marinade over top of the bird spreading evenly.
  • Finish roasting chicken until the inside temperature reaches 165F or juices run clear.
