Cranberry Orange Butter

- 1/2 cup butter, softened shopping list
- zest of a whole orange (palm sized, any variety) shopping list
- 1/4 cup sweetened dried cranberries, finely chopped shopping list
- 1-2 Tablespoon(s) of Orange juice (or liquor of choice) shopping list
- *liquid sweetener if needed, ie. honey or maple syrup shopping list
How to make it
- Add the chopped cranberries to the orange juice and let soak for 20 minutes or longer, until the cranberries soak up most of the liquid.
- Mix the zest with the butter using a fork. Add the berries and mix into the butter until it's all incorporated. Mashing the berries to release any liquid as you mix. (so you don't get weeping in the final product)
- Taste, determine if you want to sweeten it lightly with honey etc.
- Put the butter into a little jar or ramekin. Chill in the fridge for at least an hour until solid. Or put the butter on a sheet of wax paper or plastic wrap, dollop into a rectangle, wrap and roll in the wax paper/plastic wrap into a smooth log shape. Twist the ends closed, secure if needed.
- Use within the week or freeze up to a month.
