Authentic Mexican Salsa

- 8 tomatoes on the vine, quartered. Don’t use large tomatoes for this as it will be too watery. shopping list
- 2 - 3 jalapeños, or Serrano peppers, halved. Serrano’s are much hotter, so be ready for the heat. I use 2 jalapeños for mine, cuz I’m a baby like that. Her recipe uses Serrano’s. shopping list
- 1 sweet onion, quartered shopping list
- 1 T salt shopping list
- 1 tsp cumin shopping list
- 1 cup fresh cilantro. Don’t be shy with the cilantro...this is where the flavors at. I use stems and all shopping list
- 4 cloves garlic, smashed and chopped shopping list
- 1 T olive oil (or enough to drizzle on the veggies) shopping list
How to make it
- Heat your oven to 450
- Spread the veggies on a baking sheet. I hit the baking sheet with a little Pam. It helps!
- Drizzle with olive oil
- Roast for about 20-25 minutes or until things start to char a bit.
- Toss the hot veggies in a blender with the garlic, salt, cumin and cilantro
- Blend and enjoy!
- This salsa goes great with anything...but for a special treat, try it on a good steak. Boom...so damn good.
