Ingredients
  • 1 package dry yeast or 1 cake compressed
  • ¼ cup water
  • 1 cup milk, scalded
  • 2 Tablespoons sugar
  • 2 Tablespoons shortening
  • 1 teaspoon salt
  • 3½ cups sifted all-purpose flour
  • 1 egg

Directions
  1. Soften active dry yeast in warm water (110° F), compressed yeast in lukewarm water (85° F). Combine milk, sugar, shortening and salt; cool to lukewarm. Add 1 cup of the flour; beat well. Beat in softened yeast and egg. Gradually add remaining flour to form soft dough, beating well. Cover and let rise in warm place (82° F) till double (1½ to 2 hours). Turn out on lightly floured surface and shape as desired.
  2. Butter Flakes: Roll Plain Roll Dough in 18 x 14-inch rectangle. Cut crosswise in 12 1½-inch strips. Brush generously with melted butter. Stack 6 strips; cut in 9 portions. Repeat. Place cut side down in greased muffin pans. Let rise till double. Bake at 400° F for 12 to 15 minutes. Brush with butter. Makes 18.
  3. Cloverleaf Rolls: Shape Plain Roll Dough in small balls. Three should half fill a greased muffin pan. Brush with melted butter. Let double (25 to 30 minutes). Bake in hot oven at 400° F for 10 to 12 minutes. Makes 24.
